Edith Carter: A Biographical Sketch

A large number of people in North America and elsewhere suffer from many “maladies of civilization”, i.e. a wide range of medical disorders which can be traced to unhealthy eating habits, such as an overabundance of refined and prepared foods and the ever increasing number of food additives and other chemicals. The number and variety of of allergies are staggering as is an increasing dependence on medication.

To help alleviate the situation and teach people in quick and easy steps how to utilize food for maximum benefit, Edith Carter established THE HOUSE OF CULINARY INVENTIONS - School of Nutritional Cooking in the Spring of 1994. She did so on the specific urging of Ottawa area Naturopaths and other holistic physicians.

Edith Carter’s road to nutritional cooking was an unconventional one. Having lived in several countries and experienced very different cultures and much folk wisdom, she acquired a fair amount of knowledge on food and particularly its nutritional and medicinal properties. Living in Canada she has become increasingly critical of conventional (particularly North American) nutritional principles. She finds much of what is being taught in “nutritional science” to be woefully outdated, erroneous and detrimental to the health of the Canadian public.

She holds the same view of the nutritional guidelines published by interest groups such as Health Canada, The Canadian Cancer Society, the Heart Institute, and others, which only serve to further confuse the public while not giving any meaningful assistance to those in need.

This led her to continual independent research under the tutelage of holistic practitioners. She gathers her information from many sources and she does so in four languages. She has acquired a body of knowledge that has won her the respect of both students and holistic physicians alike. Her knowledge and expertise have attracted many health practitioners who now refer their patients to her. EC is associated with The Holistic Clinic where she and Dr. Todd Norton have monthly talks on various aspects of nutritional health. A much sought-after speaker, she has addressed many groups, which range from high school students to corporate executives. She is provocative, irreverent, and delights in debunking popular myths.

In addition, she has been Food Editor and a regular columnist for the publication “Energy Medicine”*, an award-winning magazine, and she has also written a regular column for the newsletter of The Natural Food Pantry health food store.

Her international experience has been gained on both a personal and a professional level. Earlier in her career she gained a worldwide profile from her leadership position in organizing international science symposia for the Canadian Commission for UNESCO.

In her spare time she is an accomplished painter and her works have been featured in galleries and juried exhibitions in Canada and the US. She also enjoys playing chamber music with friends. Edith has a passionate zeal for living and she is most comfortable when she is mixing at the grass roots level with the personalities, the customs and the cuisine of the indigenous people all around the world and especially those in Latin America, South America and Asia.
